Farmers' Market Salad with Buttermilk-Chive Dressing from "flour, too" by Joanne Chang


Our Farmers' Markets are brimming with more and more produce every week.  The carrots and beans, tomatoes and radishes are in and the Red Bliss potatoes are still baby-sized and beautiful.  So you can imagine my delight at opening Joanne Chang’s latest cookbook, “flour,too” (Chronicle Books 2013) and discovering the perfect recipe to put them all together.  Joanne Chang’s recipes are a regular feature on Chewing the Fat.  Pastry Chef Chang’s takes on classic American desserts from homemade Oreos http://www.chewingthefat.us.com/2012/03/joanne-changs-recipe-for-homemade-oreo.html to the most recent post featuring Strawberry shortcakes http://www.chewingthefat.us.com/2013/06/joanne-changs-balsamic-strawberry.html are extremely popular, not just with Andrew but with all our readers.  Now, in “flour, too” her recipe files have been expanded to include savories from her Flour Bakeries and Cafes in Boston.  This is huge boon to savory cooks like me.  But fear not.  Chef Chang's new cookbook includes enough sweetness to satisfy both the baker and the cook in our house.

Joanne Chang's Balsamic Strawberry Shortcakes from Boston's Flour Bakery

     
It’s strawberry season in the Hamptons and they’re truly flawless this year.  Nothing could be more welcome after our rainy, cold spring than these beautiful, bountiful berries.   And nothing says June like their arrival.  But time isn’t on our side.  The season is fleeting and the chance to put fresh local strawberries on the table is right now.  Out here, there are any number of road side strawberry fields where you can pick your own, a fun way to spend an afternoon with the children in your life.  We opted to go the lazy man’s route and bought our strawberries at our local farm stand down the road. We brought the brilliant red berries home and out came Joanne Chang’s “Flour” Cookbook, one of Andrew’s go-to sources for truly unbeatable baking recipes.  Use the search function on the left side of this page and you’ll come up with no less than 6 recipes from Ms. Chang, every single one of them a winner in our kitchen and with our friends.  This is no exception.

         When we published Joanne Chang’s Sticky Bun recipe, winner of “Throwndown” with Bobby Flay, we heard from no less than Bobby himself.  “Joanne Chang's sticky buns are by far the best sticky buns I have ever eaten..hands down! If you are ever in Boston, stop in at Flour or try her recipe online on Foodnetwork.com or buy her great cookbook Flour...the recipe is there too...Yum”  Now if you haven’t already made these sticky buns, what are you waiting for? But if you have made them, then you may remember that the recipe for the dough was a double recipe.   Now of course, if you’ve gotten over your sugar shock from the sticky buns, you can make another batch.  But if you want to try something equally delicious, this is for you.

Christmas Baking: Homemade Oreos and Homemade Fig Newtons' from Joanne Chang

Christmas Baking is as much a part of the holiday as decorating the tree or singing songs of Christmas.  And if you have children, it's great fun to get them into the kitchen and bake a few cookies.  This year, the press has been full of stories of the demise of the Twinkie and the loss of Ho Hos.  To be honest, I was never a fan of either of these brands.  But if you told me Oreo or Fig Newtons were going out of business, I'd be incensed.  However, all of us who love pulling apart an Oreo to get at the frosting or biting into the gooey center of a Fig Newton would have a backup:  A brilliant baker named Joanne Chang has mastered these treats and shared her recipes for them in "Flour", the baking cookbook named after her Boston bakeries. And another brilliant baker, namely Andrew, has baked them for us and shared his tips for making perfect home-made Oreos and Fig Newtons.

Joanne Chang's Recipe for Homemade Oreo Cookies

        We couldn't let this momentous occasion pass without throwing a party.  This week, the Oreo cookie, invented in New York's Chelsea, is having its 100th birthday.  With over 491 billion Oreos having been consumed since 1912, it is by far and away the most popular cookie of the 2oth century.  And following its introduction in China in 2006, it is now the number one cookie there as well. I spent time last Spring with someone whose passion for Oreo cookies can readily be seen in the picture above.  My grandson Mason’s days are punctuated with pleas for these great American treats.  Since they are inevitably accompanied by a glass of milk and since his phenomenal nanny, Stephanie, keeps the cookies down to a minimum, there’s something wholesome about  his love of Oreos.  Too bad he’s yet to taste Andrew’s Homemade version of Joanne Chang’s deeply chocolate crisps and luscious vanilla cream.

Milky Way Tart adapted from Joanne Chang


         
       I’ve told you some of the story of Joanne Chang, the Harvard educated economist who threw in the towel and went on to open “Flour”, a Boston bakery and cafe that’s grown to three locations. That was between opening a marvelous pan-Asian restaurant called “Myers + Chang” with her husband, Christopher Myers.  But in case you missed it, Ms. Chang’s culinary education bears repeating; it is such an American story.  Ms. Chang grew up in a first generation Chinese American family in Texas.  Her introduction to American desserts consisted of visits to friends’ houses and the consumption of such great American classics as Wing Dings, Whoopie Pies, and Oreo Cookies.  Now, as one of the most inventive of bakers, Ms. Chang has re-invented some of her childhood favorites in recipes she shares in her cookbook “Flour” (Chronicle Books 2010). Here on Chewing the Fat, we’ve already shared her recipe for homemade Oreos (http://www.chewingthefat.us.com/2011/05/homemade-oreo-cookies-courtesy-of.html).  That was such a success that it was just a matter of time before Andrew tackled another one: Her delicious caramel and chocolate confection called the Milky Way tart.  And when he did, I think he actually improved it.
