Fish in Crazy Water and a tribute to the woman who introduced me to it and countless other Italian recipes, Marcella Hazan

If I’d never been introduced to Marcella Hazan, my cooking would have been so much poorer for it.  Marcella died last week at her home in Naples, Florida where she and her inspirational muse and husband of 58 years, Victor Hazan, had retired some years ago.  It was a loss that countless numbers of us felt deeply.  Her readers, her dear husband and her devoted son, Giuliano, were all stunned because up until the very last she was sharing her infinite wisdom with us via Facebook, of all places.  I know this only too well as I had not only ‘friended’ her but been the recipient of her advice on several occasions.  I’d written about the Italian disdain for cheese coming anywhere near seafood.  She shot right back that she’d changed her mind about that particular taboo.  She also wrote me when I had a question about a strawberry dessert.  She was endlessly generous with her time and I can’t tell you how the food writer in me was overwhelmed that I would hear from this extraordinary authority who surely had better things to do.

Mediterranean Diet 101: Chorizo and Cannellini Stew adapted from Bon Appetit


         The Mediterranean Diet is back in the news with some startling test results.  If you switch to a diet rich in olive oil, nuts, beans, fish, fruits and vegetables and drink wine with meals, the diet will prevent about 30 percent of heart attacks, strokes and death from heart disease.  The European doctors who conducted the study ended it earlier than expected. They thought it was unethical to continue. The results were so clear, the doctors felt that group not following the diet was at too great a risk.   Not one of the people in the study were in great shape. All 7447 of them were overweight or smokers or had diabetes or some other factor that put them at risk for heart disease.  Most of them were already taking blood pressure medication or cholesterol lowering drugs.

B’stilla, Moroccan “Pigeon Pie”



I got over my fear of Phyllo
and made this sensational pie.
         I’ve been staring at a recipe for this pie for months now.  As appetizing as it looked, the main barrier to getting it made was a terror of working with Phyllo dough.  As is well known, I am not the baker in our house and I leave pastry making completely in Andrew’s brilliant hands.  Here, there was no pastry-making involved just the purchase of ready-made Phyllo from the supermarket freezer.  When I finally got up the nerve to make my B’stilla, it turned out all the trepidation was unnecessary.  I passed my Phyllo test with flying colors.  And you can too.  And once you do, you’ll be able to taste this aromatic combination of sweet and salty flavors under a crisp cover of pastry topped with powdered sugar.  And fear not, no pigeon is necessary to make an authentic B’Stilla.
